Chalupas

Before Taco Bell came up with their poor substitute of this Mexican dish, my grandmother made these little sandwiches to go with tortilla soup or tiny ones served as appetizers with Margaritas. Use leftover rotisserie chicken from the market for the filling

Cheese Grits Bites

This is a great party appetizer. Bites this good will go fast so make up trays of them 2 days ahead and store in refrigerator. Reheat in 375-degree oven until hot and crispy, 7-10 minutes. These party nibbles freeze well so keep some on hand for those unexpected

Deviled Eggs

Every southerner serves these delicious appetizers before any special meal or for parties. This is my favorite recipe for deviled eggs but there are hundreds of variations. The core, cooked egg whites filled yolk-mayo mixture remains the same but try adding extra ingredients to make them your own. Some suggestions are chopped onion or chives, pickle relish, chopped cooked (canned) shrimp or crab, or fresh herbs like dill or tarragon are good. Experiment with different seasonings like lemon pepper or capers.

Easy Southern Spiced Pecans

This is truly a southern recipe. Pecans grown throughout the southern parts of the United States and have become a popular ingredient in southern dishes. Add to green salads for a crunchy bite, wonderful in fruit and chicken salads. My kids eat them by the handfuls while watching movies.

Shrimp Boulettes

These crispy little meat balls are perfect for a party. A boulette is a small meat ball or dumpling and when they are fried they turn into a thing of beauty. Make them small, just one bite and serve with toothpicks so everyone can dip easily

Helpful Tips:
The key to successful custard preparation is low heat: high heat causes the eggs to curdle, resulting in lumpy, thin mixtures. Either cook custard in a double boiler or if cooking over direct heat, always use a heavy saucepan. Stir the mixture constantly with a whisk. Check thickness by lifting the spoon from custard and holding it for 15 to 20 seconds. If the spoon does not show through mixture, the custard has thickened to the correct consistency.
