| Sourdough Bisquits | | If you have a hankerin’ for good ol’ sour dough biscuits made the way the chuck wagon cooks made them then this is the recipe for you. They are delicious and sour, perfect with fried chicken or for breakfast with eggs. Here we use an oven but if you want to try these biscuits baked over an open camp fire You can use a Dutch oven to bake bread. Line the Dutch oven with aluminum foil and place the dough on the foil or lay the bread pan in the Dutch oven. Stack hot coals on the lid. You can bake bread over an open fire with two pans. Two pie tins will work for biscuits. Place one tin on the coals and place the biscuits in the pan use the other pan as lid for the biscuits, then stack the hot coals on top. Remember, you are trying to get as much heat from above as below. I don’t know if this works or not I saw it on food network once and it seemed like it would work. Helpful Tips:
To test for doneness - tap top of loaf lightly with your fingertips. If it sounds hollow and is well browned on top, the bread is ready or test with an instant read thermometer inserted from the bottom or side into middle of loaf, temperature should read 200 – 210 degrees.
