    Sourdough Bisquits

    If you have a hankerin’ for good ol’ sour dough biscuits made the way the chuck wagon cooks made them then this is the recipe for you. They are delicious and sour, perfect with fried chicken or for breakfast with eggs. Here we use an oven but if you want to try these biscuits baked over an open camp fire You can use a Dutch oven to bake bread. Line the Dutch oven with aluminum foil and place the dough on the foil or lay the bread pan in the Dutch oven. Stack hot coals on the lid. You can bake bread over an open fire with two pans. Two pie tins will work for biscuits. Place one tin on the coals and place the biscuits in the pan use the other pan as lid for the biscuits, then stack the hot coals on top. Remember, you are trying to get as much heat from above as below. I don’t know if this works or not I saw it on food network once and it seemed like it would work.     Helpful Tips:
    Start your yeast before adding to the rest of the ingredients is a good way to test if you yeast is alive or viable. Sprinkle yeast into one-quarter cup of lukewarm water and 1 tablespoon of flour and a teaspoon of sugar, stir and let allow to rest for 5 minutes. Yeast mixture should be bubbly and foamy if the yeast mixture does not start to bubble within five to ten minutes; your yeast is dead or enervated. Throw away and start over with fresh yeast.
