Ham and Pea Pasta
Ingredients
2 cups milk
3 ½ tablespoons unsalted butter
3 ½ tablespoons all-purpose (plain) flour
1 tablespoon chopped fresh tarragon

½ cup freshly grated

Directions
Pour the milk into a saucepan placed over medium heat when the milk is little more than warm turn off heat
Place a tall, narrow saucepan over low heat immediately add 2 ½ tablespoons of the butter and all the flour, stir vigorously with a wooden spoon until the butter melts and the flour is incorporated. Once the butter is fully melted, continue cooking and stirring the mixture for a couple of minutes. Then gradually add the warm milk a little at a time, stirring continuously. Add more milk only after the previously added milk has been fully incorporated. After all the milk has been added, cook, stirring, until thickened, a few minutes longer. Add the tarragon, ham and salt to tasted and stir a few seconds longer. Remove from the heat, cover and keep warm.
Preheat a broiler. Grease a 6-by-12-inche flameproof dish with the remaining 1 tablespoon of butte.
Bring the water for cooking the pasta to a boil and add peas. When the water returns to the boil, add your choice of pasta. Cook until al dente, drain and transfer prepared dish. Pour the sauce over the top and sprinkle with cheese.
Slip the baking dish into the broiler and broil until top is golden, about 3 minutes. Serve immediately.
