Ingredients

1 cup quick cooking grits
1-teaspoon salt
4 cups boiling water
1 full cup extra sharp cheddar cheese, grated
1 egg slightly beaten
Dash of red pepper or to taste

Directions

Cook grits as directed on package. When grits are cooked, remove from fire and stir in cheese and egg. Add red pepper. Grits should have a distinct cheesy flavor add more if desired. Stir until cheese is melted. Pour grits into a shallow dish or pan. Grits should about ½ inches thick. Allow grits to cool completely then place in refrigerator for several hours or overnight. Next day, cut grits into bite size pieces, put into a bag containing enough flour to coat the grits when shaken. Remove from bag and fry in hot 375 degree until golden. Drain well and serve at once or allow to cool place in freezer storage bag and freeze. Will keep for 3 months in freezer.
