Helpful Tips:
To clean spilt wine from a tablecloth while the stain is still wet, cover it with a mound of ordinary table salt; when dry just brush away. The salt will absorb the wine so completely you will not even have to wash the cloth.

Bean And Potato Pie

One can of lima beans
Water
Salt and pepper to taste
2 cloves garlic minced
1 med size onion chopped
2 carrots chopped
2 ribs celery chopped
½ tablespoon of poultry seasoning
3 Cups sliced potatoes, uncooked
1 Tbsp. butter
T Tbsp. flour
Pastry pie crust home made or from the refrigerator section of the market, to cover

Directions

Place 3 cups sliced raw potatoes and salt in medium sauce pan add enough water to cover potatoes by about 1 inch boil gently until the potatoes are tender, do not drain. In a strainer drain and rinse lima beans in cool water. Add beans to cooked potatoes stir gently to mix. In a separate sauce pan stir the butter and flour over medium heat until blended, add all remaining ingredients cook until vegetables are soft. Add a little of the broth from the potato bean mixture and stir until smooth. Add to potato mixture and stir add more water if needed. Mix well and pour into an greased baking pan. Cover with piecrust, cut vents in crust to allow steam to escape and bake at 350 degrees to a light brown about 45-55 minutes.

Helpful Tips:
To test for doneness - tap top of loaf lightly with your fingertips. If it sounds hollow and is well browned on top, the bread is ready or test with an instant read thermometer inserted from the bottom or side into middle of loaf, temperature should read 200 – 210 degrees.
